4 C diced fresh apples
2 C sugar
1/2 C oil
2 eggs, beaten
1 C chopped nuts
2 tsp vanilla
2 C flour
1 tsp salt
2 tsp baking soda
2 tsp cinnamon

Combine apples and sugar. Mix together with oil, eggs, nuts and vanilla. Add dry ingredients and mix well. Pour into greased 9x13 pan. Bake 350 for 1 hour. Frost with cream cheese frosting (recipe following) when cake is cool.
Cream Cheese Frosting
8 oz cream cheese
2 C powdered sugar
1 tsp vanilla
1/2 stick butter (opt)
Beat cream cheese and butter with mixer until fluffy. Add powdered sugar and vanilla beat until smooth and creamy.
