Salad:
3 cans Black Beans, drained
1 lg. bag Super Sweet Corn (frozen)
1/2 c. Red Onion, minced
1/2 c. Green Scallion, minced including some of the green
tops
1/2 c. Fresh Cilantro, chopped
2 c. Cherry Tomatoes, halved
Fresh Cilantro sprigs for garnish
Smoked Chile Vinaigrette, recipe follows

Vinaigrette:
1/3 c. Red Wine Vinaigrette
1 tsp. Sugar
1/2 tsp. Salt
1/2 - 1 tsp. ground Cumin
1 Jalapeņo Pepper, finely diced

Directions:

Mix up vinaigrette dressing and then combine everything. Letting
this sit for a few hours in the refrigerator makes it taste even
better.
