Ingredients:  
1 lb. Italian sausage, medium spicy
1 c. chopped onion
2 cloves garlic
5 c. beef broth
1/2 c. water
1/2 c. dry red wine (or water)
2 c. or 4 medium chopped, seeded, peeled tomatoes
1/2 tsp. basil leaves
8 oz. tomato sauce
1 1/2 c. carrots
1 1/2 c. zucchini
1 pkg. tortellini

Directions:
Directions:
Saute sausage, onion, and garlic. Add remaining ingredients EXCEPT carrots, zucchini, pepper and tortellini. Simmer for 30 min. On the second day before serving, skim fat, add remaining ingredients. Cook till tortellini is done and carrots are still a little crispy.

Option: Use 1 pkg. frozen spinach instead of zucchini. Can also use pkg. of frozen carrot slices.
