5# potatoes
2/3 of a large box of velveeta cheese
16 oz sour cream
1 small chopped onion (optional)

Directions:
Directions:
Boil potatoes with skin on. Cool, skin and chop into nice size pieces.

Slowly melt velveeta, add sour cream and onion.

Butter casserole dish. Put potatoes in dish and pour cheese sauce over. Mix.

Bake at 350 for 30 - 45 minutes
Brown top of casserole (optional)
