4 large chicken breasts, cooked and cubed
zest of 1 lime
juice of 1 lime
1 Granny Smith apple, cubed
3 green onions, chopped fine
1/2 tsp. black pepper
1/2 tsp. salt
1 c. light mayonnaise
3 tbsp. Rose's sweetened lime juice, plus some honey if you prefer a sweeter taste
1 (20 oz) can chunk pineapple, drained well
1/4 c. chopped walnuts, optional

Mix all ingredients together and chill. Serve on a bed of lettuce or as a sandwich.
