2 tablespoons oil
1 large onion, chopped
2 teaspoons curry powder
2 cloves garlic; minced
3 lbs sweet potatoes (5-6 large) peeled and cut into 3/4 inch pieces
2 (14 oz) cans chicken broth
1 (14 oz) can unsweetened coconut milk
1 teaspoon finely shredded lemon peel
2 teaspoons ginger
1/4 teaspoon white pepper
1/8 teaspoon salt

Directions:
Directions:
In stockpot, heat oil over medium heat; add onion. Add curry and garlic; cook 3-5 minutes or until onion is tender; stirring occasionally. Stir in sweet potatoes, chicken broth, coconut milk, lemon peel and ginger.

Bring mixture to a boil; reduce heat. Cover and simmer 15 minutes or until potatoes are tender. Cool slightly.

Transfer 1/2 of potato mixture (about 4 cups) to blender and process until smooth. Return pureed mixture to remaining mixture in pot. Stir in white pepper and salt; heat through.
