1/3 cup butter
1 lb mushrooms, sliced
1 large sweet onion, finely chopped
3 cups cooked rice
1 (6 1/2 oz) container garlic & herbs spreadable cheese
2 cans roastes garlic seasoned chicken broth
2 cups water
salt & pepper to taste

Directions:
Directions:
Melt butter in stockpot; add mushrooms and onion; cook about 10 minutes. Let mixture cool slightly.

In blender, combine mushroom mixture, 1 1/2 cups rice, cheese and 1 cup broth; return mixture to stockpot; stir in remaiing rice, broth and water; bring to a boil; cook uncovered over medium heat 5 minutes. Add salt and pepper to taste.

Ladle into bowls, sprinkle with cooked, crumbled bacon.
