1 medium onion, chopped
1-2 cloves garlic, minced
2 large carrots, chopped
1 (6 oz) can tomato paste
1 cup veggie stock or water
3/4 cup rice
1 (15 oz) can black beans
1 (15 oz) can garbanzo beans
2 (15 oz) cans kidney beans
1 (15 oz) can corn
2 tablespoons curry paste
1/2 cup peanut butter
cumin, chili powder, cayenne pepper, black pepper, salt, basil, garlic powder to taste

Directions:
Directions:
Saute onions, garlic and carrots on high. Add remaining ingredients and simmer 30-45 minutes.

Season to taste.
