8-10 potatoes - washed - don't peel- boil and cut into chunks
1 lb Velveeta Cheese cubed

Put in a large casserole dish

top with:

1/2 c chopped onions
1 small jar pimentos drained
2 slices of cubed bread
Pour 1 1/2 sticks melted butter over bread
Sprinkle with parsley and paprika

Bake at 350 about 30 minutes
