2 C flour
1-1/4 C sugar
2 tsp. baking soda
2 tsp. salt
2 C grated carrots
1/2 C raisins
1/2 C shredded coconut
1/2 C pecans
3 eggs,beaten
1 C vegetable oil
1 apple,shredded
2 tsp. vanilla

Directions:
Directions:
Combine flour, sugar, baking soda, cinnamon and salt in a large mixer bowl. Stir in carrots, raisins, coconut, and pecans. Add to flour mixture, stirring just until moist. Spoon into greased or paper lined muffins tins. Bake at 350 for 15 to 18 minutes.
