1 T olive oil
1/2 lb chicken breast cut in 1 in pieces
1 yellow onion chopped
2 T mince garlic
3/4 c sliced carrots
1 c cauliflower
2 c chopped tomatoes with juice
4 c chicken broth
1 c fresh spinach
5 drops hot sauce
salt and pepper

Directions:
Saute chicken in oil. Set aside. In another pan add onion, garlic, carrots, stir until soft. Add chicken, cauliflower, tomatoes and broth. Simmer 20-25 min. Stir in spinach, hot sauce, salt, and pepper. Simmer 5 more min.
