1 c. yellow onions, julienned
1 c. red onions, julienned
2 c. beef stock
1 c. burgundy wine or chicken stock
1 tsp. cracked black pepper
2 Tbsp. butter
4 slices provolone cheese
2 Tbsp. Parmesan cheese, grated
2 pieces toast or Crostini

Directions:
Directions:
Using a heavy stock pot, sauté onions in butter until transparent. Add beef stock and wine and simmer or medium-low heat for one hour. Divide broth into two oven-proof bowls. Place Crostini or toast on broth, cover each with two slices provolone cheese and one tablespoon Parmesan. Cook under the broiler until cheese is melted and soup is piping hot.
