4 oz King Crap meat
1 avocado
1 tsp red onion, minced
one-half tomato, wedged
lemon slice
2 oz Maple vinaigrette

Maple Vinaigrette:
2 cups vinaigrette dressing
c. maple syrup
1 tbs. parsley, chopped
1 red pepper, chopped
2 hard boiled egg whites, chopped

Combine all ingredients in a food processor

Directions:
Cut the avocado in half, peel, and arrange open-faced on serving plate.
Maple Vinaigrette: Combine all ingredients in a food processor. Mix together the King Crab, onion, and Maple vinaigrette. Place a spoonful of the crab mixture on top of each avocado. Garnish with tomato wedges and lemon slices.
