Ingredients:  
1 Tbs. Oil (I like olive or garlic)
1 Tbs. Jamaican Jerk Rub
1 lb. Chicken tenders
1 med. Pineapple, slice into thin chunks
1 red bell pepper slice
3 green onions sliced
Lettuce
1 can black beans
6 slices bacon, cooked and crumbled

Dressing:
Juice from 2 limes
1/3 c. mayo
2 Tbs. Pineapple jam or marmalade




Directions:
Directions:
Whisk together oil and rub, add chicken slices. Mix well and set aside. Fry chicken and then add pineapple and fry to warm it up. Cut chicken into bit size pieces. Arrange the lettuce slices, Layer the remaining ingredients on top, ending with bacon. Make dressing and drizzle over salad.
