3 Med beets
4 qts water
2 c red onion, chopped fine
2 c red cabbage, chopped fine
1 lbs ground beef
Salt & pepper to taste
1 c grated potatoes
8 oz sour cream

Directions:
Directions:
Wash & scrub the beets. (leave 1 inch of the growth end on the beet). Add to boiling water and cook until beets are almost done. Save water. Peel and grate beets and add them back to the water. Add red onions and red cabbage. Brown and drain the ground beef. Add to the mixture. Salt & pepper to taste. Simmer for 1 hour. Add grated potatoes. Simmer for another half hour. Add 1 Tbsp sour cream to each bowl as served.
