Brown stew meat in some olive oil with onion or onion flakes. Salt and pepper meat. Peel and cut up carrots (or use baby carrots) and potatoes. Place all of the ingredients in the crock pot, stir and cook on low for about 8 hours.
(I named it Halloween Stew because I would fix it every year at Halloween. I could fix it in the morning and not worry the rest of the day. The day was always so busy with costumes and school costume parades and getting the kids ready again at night for trick-or-treating and I wanted the kids to eat something nutritious before all the sweets).
