1 (15 oz.) can black beans, rinsed and drained 1 c. frozen corn kernels, thawed 1/2 c. chopped red bell pepper 1/2 c. chopped fresh cilantro 8 green onions, thinly sliced (about 1 c.) 3 tbsp. lime juice 2 tbsp. balsamic vinegar 1/2 tsp. ground cumin 1/4 tsp. salt
Combine all ingredients. Serve immediately, or cover and chill 30 min. Store in refrigerator up to 3 days in an airtight container. Serve with baked tortilla chips.
