Ingredients: 2 - 2 1/2 lb chicken breast Olive Oil Mrs. Dash 1-4 teaspoons Yellow curry powder (or paste) to taste 1 can chicken/mushroom soup 3 potatoes, chopped, diced 2 carrots, diced 1 large onion, diced raisins

Directions:Saute carrots, onions & potatoes in large skillet (about 5 minutes) in olive oil. Put in baking dish. Rub chicken down with olive oil & season with Mrs. Dash & Brown chicken in olive oil (or on your George Forman grill) Put cooked chicken into backing dish & include all scrappings from when you browned chicken (it really adds a lot of taste). Mix soup, 1/2 can water & curry powder, Add raisins & pour on top of chicken. Bake in 350º oven for 1 hour. Or until the carrots are cooked. |

Notes: Serve over rice. I like to throw some raisins in the rice to but add extra water because the raisins will soak up water too. Also wonderful if you want to throw some coconut and/or crushed peanuts on before serving. I make extra of the chicken too & the next day I reheat the chicken & throw it on tope of mixed greens for a curry chicken salad. Doesn't need dressing just throw the sauce on the salad too. Yummy!
