1 1/2 lbs sausage
3 Tbs. bacon drippings or olive oil
3 Tbs flour
2 med onions, chopped
1 bunch green onions, chopped
2 Tbs parsley, chopped
2 Cloves garlic, minced
2 c rice
2 1/2 c water
3/4 t red pepper (optional depends on taste - I use Mrs. Dash)
2 tsp salt (again I use Mrs. Dash or Tony's Cajun seasoning)

Directions:
Brown meat in bacon drippings (or olive oil) remove & add flour. Use heavy pot or large skillet & brown flour to a dark roux. Add onions, parsley & garlic. Cook until soft, then add water & rice, seasonings & browned meat. Bring to boil, lower heat to lowest point & cook for one hour, covered tightly. When rice is done, remove lid & cook for a few minutes.

You can substitute chicken for the sausage. I like it 1/2 chicken, 1/2 sausage. Also, if I have bacon I cook up 3-5 pieces for the bacon fat & throw the bacon into the mix. Note: Roux is just the name for the gravey-like four & oil when it's cooked up. Yummy!!
