2 T. cooking oil
1/4 cup chopped green onions
1 clove garlic, minced
3 cups cold cooked rice
3 T. soy sauce
2 eggs, beaten
1/8 t. pepper
1/2 cup bean sprouts (optional)
1/3 cup frozen peas, thawed

Directions:
Directions:
In a large skillet, heat oil, saute green onions & garlic til tender. Stir in rice & soy sauce. Cook over low heat about 7 minutes, stirring occasionally. Push rice mixture off to the side of the skillet. Stir in eggs & pepper. Cook 5 more minutes, stirring often. Add in the bean sprouts (optional) & the peas. Serve with additional soy sauce if desired.
