1 box lasagna noodles
1 jar spaghetti sauce, add a pinch of brown sugar
1 medium zucchini, sliced
1 small container fresh mushrooms, sliced
1 pkg. frozen spinach, thawed and drained
1 8oz. cottage cheese
2 cups mozzarella
1 egg
1/2 cup Parmesan cheese

Directions:
Directions:
Prepare lasagna noodles as directed on the box. Mix veggies together and set aside. Mix cheeses and egg together and set aside. Spread a thin layer of spaghetti sauce on the bottom of 9X13 pan. Layer: noodles, veggies, cheese, sauce, noodles, veggies, cheese, sauce, noodles, sauce, and top with regular mozzarella cheese. Sprinkle with more Parmesan if desired. Bake at 350 degrees for 30 minutes.
