2 cups brown sugar
1 cup shortening
cup buttermilk
teaspoon salt
1 teaspoon vanilla
4 cups quick oats
1 cups flour (if using self rising flour, omit salt
and baking soda)
1 teaspoon baking soda

Directions:
Directions:
Heat oven to 375 degrees. Mix sugar, shortening, buttermilk & vanilla. Stir in remaining ingredients. Shape dough into 1 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten cookies with the bottom of a glass dipped in water. Bake until golden brown (8-10 min). Immediately remove from cookie sheet.
