I large onion chopped
5 chicken breasts boiled and cubed
1 tin of chopped tomatoes
1 diced apple (optional)
2 ozs of raisins (optional)
1 tbsp. of extra virgin olive oil
4 medium sized potatoes, cooked and diced
1 tin of tomato puree
1 tsp of cumin
2 tsp of extra hot curry powder
2 tsp of hot curry powder
1 tsp of garam masala
I block of creamed coconut

Directions:
Directions:
Saute the onion in olive oil. Add cooked diced chicken, tomatoes, potatoes, puree, creamed coconut and all spices excluding the garam masala. Bring to the boil then simmer for approx. 40 mins. Add the garam masala at the end. Serve on a bed of basmati rice with naan bread.
