1 1/2 c. orzo pasta
1 bunch green onions, chopped
2 Roma tomatoes, diced
1/3 c. pine nuts (or substitute walnuts, chopped)
1 1/2 T. butter
1 t. seasoned salt
14 t. black pepper
1 c. shredded Parmesan cheese


Directions:

Cook orzo according to pkg directions. Chop green onions plus tops and dice tomatoes. Toast pine nuts in a skillet over medium heat for 2 minutes, stirring occasionally. Add butter to pine nuts in skillet. Stir in green onions, tomatoes, salt and pepper. Saute 2 minutes. Stir in cooked orzo and heat thru--about 3 minutes longer. Add Parmesan cheese and mix until melted. Serve hot.
