1 Large boneless chicken breast
1/2 medium onion chopped
1 small can chunk pineapple
Yellow curry powder
Coconut flakes
Flour to thicken

Directions:
Directions:
Add juice from pineapple into a large skillet with a 1/4 c water and onion, high heat.
Add chicken cut into bite sized pieces.
Add a pinch of salt
Add about 1T (+/-) Curry powder, should look yellow
Turn temp down to med-high until chicken is cooked ( you may need to add water).
After chicken is cooked through add pineapple chunks and cook 3 more minutes.
Thicken with a little flour and serve over rice with coconut flakes sprinkled on top.
