8 oz. cream cheese, softened
1 c. margarine

2 c. flour

2 eggs, beaten
1 1/2 c. packed brown sugar
2 tsp. vanilla

1 1/2 c. chopped pecans

powdered sugar (optional)

Directions:
Directions:

Combine cream cheese and margarine until well blended. Add flour and mix well. Make into large dough ball and chill, covered in plastic wrap.

Divide dough ball into quarters. Divide each quarter into 12 balls. Press each ball into the bottom and sides of miniature muffin pan (forming a pie crust).

Combine eggs, brown sugar, and vanilla. Stir in pecans. Spoon mixture into pastry shells, filling each cup.

Bake at 325 for 30 minutes or until pastry is golden brown. Cool 5 minutes. Remove from pans. Sprinkle with powdered sugar.

Makes 4 dozen.
