3 cups cooked sweet potatoes
1 cup sugar
2 eggs, beaten
1 stick melted butter (can use less)
1/2 cup coconut (you can omit)
Topping:
1 stick melted butter
1 cup brown sugar
3/4 cup flour
chopped pecans

Directions:
Directions:
Cook sweet potatoes in saucepan of boiling water; Drain, cool and peel sweet potatoes. Add to large bowl and mash; add all ingredients to potatoes except chopped pecans. Pour sweet potato mixture into a greased 9x13 pan or dish. Sprinkle chopped pecans on top. Bake 325 about 1 hour,

This dish takes a little longer since you have to cook the sweet potatoes, but it's worth the extra effort and sweet potatoes cook pretty fast in boiling water.
