1 c. butter, softened
1 c. sugar
1 c. light brown sugar, firmly packed

1 egg, slightly beaten
1 c. vegetable oil

1 c. quick rolled oats
1 c. crushed cornflakes (measure after crushing)
3 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla

1/2 c. coconut
1 c. pecans (optional)

Directions:
Directions:

Cream butter with the sugars. Add egg and oil. Mix well.

Add oats, cornflakes, flour, soda, salt and vanilla. Mix well.

Stir in coconut and nuts.

Roll into 1 inch balls of dough and place on a lightly greased cookie sheet. Flatten the balls with a fork in a crisscross pattern. Dip the fork in water after flattening each cookie.

Bake at 350 for 10 minutes. Do not over bake.
