shuck beans
fat meat (pork) to season
salt to taste
hot pepper pod

Directions:
Directions:
Soak beans overnight in water. Cook next morning. Add a piece of fat meat pork and a small pod of hot pepper to season. Add a little salt, to suit your taste. Eat with cornbread and raw onion or fried kraut.

Note from Molly Myles Bundy: Once when James Still was staying at our house, somebody gave us some shuck beans. James Still was delighted. He sat in the kitchen and instructed me, step by step, how to prepare them.
