2 tbsp. honey 1/4 c. sugar 1/4 c. boiling water 1 tbsp. lemon juice 3 c. frozen sliced peaches, defrosted Champagne
Combine the honey, sugar, water and lemon juice. Place in a blender and puree with the peaches. Strain and reserve the peach puree. Place 2 tbsp. or so of puree in the bottom of each champagne glass. Fill with champagne.
