1 box white cake mix
1 cup coconut
1/4 cup cooking oil
1 1/2 cups water
2 eggs
15 oz. cream of coconut
8 oz. Cool Whip
1/2 cup toasted coconut

Directions:
Directions:
Put oil into bottom of a 9 x 13 pan. In a separate bowl mix coconut, water, eggs and cake mix. Pour into pan and mix with oil. Bake at 350 for 30 minutes.
Poke holes in top of warm cake with the handle of a wooden spoon. Pour coconut cream over cake and let cool.
Frost with 8 oz. Cool Whip and cover with 1/2 cup coconut that has been toasted. Refrigerate.
