4 Large Baking Potatoes
1T butter
1 c shredded cheddar cheese
1/4 c butter
1/2 c sour cream
1/4 c chopped chives
1 tsp salt
1/2 tsp pepper

Directions:
Directions:
1. Preheat oven to 400 degrees
2. Wash potatoes and pat dry
3. Take butter and spread on hands and rub on potatoes
4. Place potatoes on cookie sheet and into oven. Bake until tender to center when pierced with toothpick about 1 hour
5. Let potatoes cool for a few minutes until you are able to handle. Then cut each potato in half lengthwise and scoop out the potato meat (leave about 1/4" so the skins are not too flimsy) and place in bowl
6. Add all of the remaining ingredients and stir until mixed
7. Replace mixture back into empty potato skins
8. Return potatoes to oven for 15 - 20 minutes and serve hot
