1 onion diced 2-3 cloves of garlic diced 1 sweet potato (shredded--I use a cheese grater) 1 large can of tomatoes 1-2 small cans of tomato sauce 1 1/2 tsp. basil 1 tsp. oregano 1 tsp. sage 1-2 T. brown sugar salt and pepper
Saute onion and garlic until translucent, and then add sweet potato stirring constantly for 5-7 minutes. Add tomato and spices and simmer for 10-15 minutes. Serve over pasta noodles and top with Parmesan cheese.
My kids love this pasta sauce, and they have no idea they are eating sweet potatoes.
