1 lb. small red potatoes, peeled
4 Tbsp. unsalted butter
2 Tbsp. unsalted butter, softened
1 Tbsp. chopped parsley
1 Tbsp. fresh minced chives
Salt and pepper

Directions:
Directions:
Parboil potatoes in a salted water in a sauce pan for 10 minutes; drain.
Melt butter in the pan over low heat. Add the potatoes, cover and cook 10 minutes. Swirl the pan occasionally to stir, holding the lid in place.
Uncover and increase heat to medium-high. Saute 10 minutes, turning potatoes until golden brown on all sides.
Place in serving bowl and toss with softened butter, herbs, and seasonings. Yumm!
