1 9-inch pie crust

2 c. milk
1/2 c. sugar
1/4 c. flour
1/2 tsp. salt
2 Tbsp. butter

3 egg yolks, beaten

2 tsp. vanilla
1 c. coconut (flake)

3 egg whites
6 Tbsp. sugar
1 tsp. vanilla
1 tsp. cream of tartar


Bake pie crust, cool and set aside.

Combine milk, sugar, flour, salt and butter. Cook over medium heat, stirring constantly, until thick. Add beaten egg yolks and cook three minutes.

Stir in vanilla and coconut. Pour into baked pie crust. Top with meringue.

MERINGUE: Beat egg whites until stiff. Add sugar, vanilla and cream of tartar. Beat until fluffy. Spread on pie and brown in 350 oven (watch closely).
