5 lbs potatos
1 cup shreaded carrots
2 cups Hellmans Mayo
2 tsp. very finely diced onions or more to taste
Salt and pepper to taste

Directions:
Boil potatoes in large pot to boil then lower to a simmer (score potatoes 1st.); Rinse in very cold water and add 1 cup of icecubes. Slip the skins off if you want. Drain potatoes and dry pot. cut potatoes into medium chunks. Return to pot, add rest of ingrents to pot and fold until all potatoes lightly covered. CHILL FOR at least 2 HOURS AND STIR AGAIN add more mayo if necessary AND SERVE
