1 T. olive oil
1/2 lb. chicken breast, cooked and cut in 1 in. chunks
1 med. yellow onion, chopped
2 lg. garlic cloves, minced
3/4 c. sliced carrots
1 c. cauliflower, in chunks
2 c. chopped tomatoes with juice
4 c. non-fat chicken broth
1 c. fresh spinach leaves, torn in pieces
5 drops hot chili sauce
Salt and pepper to taste

Directions:
Saute chicken in oil, remove from pan. Add onions, garlic and carrots to pan, stir until onions are soft. Return chicken to pan with cauliflower, tomatoes and broth. Simmer for 20-25 minutes. Stir in spinach and seasonings and simmer 5 minutes.
