"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Forgotten Cookies, by Beth Cunningham, is from Cooking in the Tropics 2,

families or individuals create heirloom cookbook treasures.
2 egg whites 1 tsp. vanilla extract 1 pinch salt 1 c. semisweet chocolate chips 1/4 c. white sugar
Preheat oven to 325°.
Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoon at a time, beating after each addition until the meringue stands in stiff peaks. Stir in vanilla and fold in chocolate chips. Drop by teaspoonful on a lined baking sheet and place in a preheated oven. After 2 minutes, turn off oven. Leave meringues in oven overnight. Remove from pan and store in air tight container.
