5 cups thinly sliced red potatoes (about 7)
1/4 cup water
3 T. butter or margarine
1/4 cup chopped onion
1/4 cup flour
2 cups milk
1 cup cheddar cheese, shredded
1 t. salt
1 cup fresh spinach, chopped
4 strips bacon, cooked crispy & crumbled

Directions:

In a 2-qt. microwave-safe dish, combine potatoes & water. Cover & nuke them on high 5 minutes, stir & nuke again for 4 minutes. Drain & set aside. Saute onions in butter til tender. Whisk in flour until blended. Gradually stir in milk. Cook about 2 minutes til thickened. Remove from heat, stir in cheese & salt. Pour mixture over potatoes. Add spinach & pimientos & mix well. Microwave for 2-3 minutes & sprinkle with bacon.
