4 medium onions, peeled
2 large cloves garlic
8 tbsp. butter
4 (10 1/2 oz.) cans beef consomme
2 soup cans water
3 tbsp. olive oil
1/2 c. brandy
8 slices French bread
1 1/2 c. grated Swiss cheese

Directions:
Directions:
Cut the onions into thin slices and mince the garlic. Saute in 6 tbsp. butter, stirring occasionally until onions are soft but not brown. Sprinkle the flour over the onions and stir well. Add one can consomme and one can water and bring the mixture to a boil stirring constantly. Add the remaining consomme and water and the brandy. Stir until soup is smooth and steaming hot. Heat the remaining butter and olive oil in a skillet. Saute the bread until the slices are brown on both sides. Place one slice sauteed bread in the bottom of each serving bowl and fill with hot soup. Sprinkle with grated cheese and serve immediately.
