1 carrot
2 potatoes
1 small onion
1 c. milk
dried potato flakes (to thicken)
salt and pepper

Directions:
Directions:
Dice potatoes and carrot. Chop onion. Place vegetables in pan with 2 1/2 cups water. Cook until vegetables are tender. Put this mixture through a sieve or vegetable mill, or mash fine. Add the milk to the puree. Heat on low until steaming. Sprinkle with a small amount of potato flakes to thicken. Heat slowly. Season with salt and pepper.

I revised a Boone Tavern recipe for this soup. It's one of Gina and Beth's favorite meals (with the low fat corn sticks). It is a very good comfort food.
