1/3 c. cider vinegar
1/3 c. oil
1/4 c. sugar
1 Tbsp. Dijon mustard
1 tsp. salt
1/2 tsp. pepper
1 small onion (more or less), chopped
2 tsp. poppy seeds

Combine first 7 ingredients. Process or whisk until smooth. Stir in poppy seeds.

Good for marinated veggies: i.e. cauliflower, broccoli, carrots, cucumber, tomatoes and onion rings. This dressing is also good on spinach salad.
