1 1/2 c. maple syrup
1/2 c. soy sauce
4 lb. salmon fillets
Vegetable oil to coat pan
1/2 c. coarsely ground black pepper

Directions:
Directions:
Combine maple syrup and soy sauce. Marinate fillets in mixture in the refrigerator at least 4 hours. If marinating salmon in plastic bags, turn every few hours to keep coating entire fillet.
Preheat oven to 500. Lightly oil a baking pan or large cooking sheet. Sprinkle pepper on top of fillets and pat in to coat thickly. Bake on top oven rack for 7 min. Check thickest part of fillet for doneness. If not completely opaque, return to oven for a maximum of 1 to 2 more min. Syrup may cause smoking; don't be alarmed. Avoil overcooking the salmon as it will continue to cook a bit when removed from oven. Serve immediately.
