Sweet and Sour Pork Recipe

4 boneless pork chops
1 cup carrots diagonally sliced
1 cup green peppers sliced
1/2 cup chopped onion
1 20 oz. can pineapple drained (chunks, tidbits or crushed)

1 cup pineapple juice
1 cup brown sugar
1/3 cup cider vinegar
1/3 cup ketchup
4 tbs. soy sauce
1/2 tsp. ginger
3 Tbs. cornstarch

Spray a heavy pan with Pam. Brown pork chops on both sides. Season with pork seasoning and cook until tender. Cube into bite size pieces.

Combine sauce ingredients and cook until thick. Stir constantly.

Cook carrots and onion in the pan the pork chops were cooked in until almost tender, add peppers.
Do not over cook vegetables. Add meat, pineapple, and vegetables to sauce. Heat and serve over rice.
