2 Lb. Zucchini
2 Lb. Yellow Squash
3 Cups Grated Sharp Cheddar Cheese, Divided
2 Cups Crushed Butter Crackers, Divided
2 Onions, Diced
2 Eggs
Pepper

Directions:
Directions:
Boil squash in salted water until soft; drain well. Mash squash and stir in onions, eggs, 2 cups of cheese and 1 1/2 cups of cracker crumbs. Pour into greased 9x9-inch casserole dish. Top with remaining cracker crumbs and cheese. Bake at 325 for 45 minutes or until puffed and light brown. Can be made up to 2 days in advance and refrigerated.
