4 pounds vine ripe tomatoes (about 5 med.), diced
1/2 large sweet onion, chopped
1 cup fresh cilantro, chopped fine
4 fresh jalapeņo chiles, seeded & chopped
2 t. minced garlic
2 t. sugar
3 T. fresh lime juice
Sea salt & freshly ground black pepper

Dice tomatoes & place in a glass bowl. Chop onion & cilantro & add to tomatoes. Stir in the peppers, garlic, sugar & lime juice. Season with salt & pepper to taste. Cover & refrigerate.
