Cheesy Potato Soup Recipe

6-8 potatoes
1 carrot
1 medium onion
1 stalk celery
1 can cream of chicken soup

1 lb. Queso Blanco ("Nice 'n Cheesy") Cheese
salt and white pepper, to taste

3 - 4 slices bacon, cooked crisp,crumbled
cheddar cheese, grated

Wash, peel and cube potatoes. Mince onion and chop celery. Shred carrots.

Place all of the vegetables in a stock pan. Add water to cover vegetables and boil, covered, until potatoes are tender. (If I have it, I will add a can of chicken broth too.) Do not drain.

Add cheese to stock pan and stir until melted. Stir in cream of chicken soup. Simmer a few minutes on low heat, stirring occasionally to prevent scorching. Add salt and white pepper to taste.

Top individual servings with bacon pieces and cheddar cheese.

This soup is so easy to make. I never measure out the ingredients, I use more or less depending on how many of my children are home.
