1 10oz. package frozen chopped spinach
1 bunch chopped green onion bulbs (no greens)
4 eggs
1 16oz. carton low-fat cottage cheese
1/4 cup crouton crumbs
2 cups grated, mild cheddar cheese

Directions:
Directions:
cook spinach according to directions and squeeze to remove
liquid. Combine spinach, onions, eggs, cottage cheese, and
cheddar cheese.
Put in quiche pan.
Bake at 325 for 1 hour.
Add crouton crumbs at the last 15 minutes.
