Olive Oil
1 Large Onion Chopped
1 Medium Bell Pepper chopped
1/2 Cup Chopped Celery
1 Carrot Pared and Shredded
3 Cloves Minced Garlic
2 (16 oz) Cans tomatoes
1 Cup Tomato Sauce
1 tsp. Basil crushed
1 Bay Leaf
1 tsp. Salt
1/4 tsp. Pepper
sugar to taste
1 lb. Halibut Steak or other fish.
1 lb. Shrimp (optional clams, crab or other shellfish)
1 1/2 Cups Dry White Wine
2 Tbs. parsley

Saute in olive oil, onion, pepper, celery, carrot and garlic. Add tomatoes, tomato sauce, basil , bay leaf, salt and pepper and a little sugar. Add fish and cook until thick and tasty. Cook until shrimp are pink.... a few minutes only. Remove from heat add wine. Garnish with parsley.
