2 (6-inch) corn tortillas
1/2 c sliced fresh mushrooms
1/2 c chopped broccoli
1/2 c shredded carrots
1/2 (14-oz) can spicy vegetarian refried beans
1 plum tomato, diced
1/2 avocado, chopped
2 tbsp. reduced-fat shredded Mexican cheese
2 tbsp. fat-free sour cream
sliced green onions (optional)
chopped cilantro (optional)

Directions:

Coat large skillet with nonstick cooking spray. Heat over medium heat. Add tortillas; toast 30 seconds on each side or until golden. Remove and keep warm.
Add mushrooms, broccoli and carrots to skillet; saute 5 minutes or until vegetables are tender. Set aside. In medium saucepan, heat refried beans over medium heat 2 minutes or until heated through.
Spread refried beans over tortillas. Top evenly with cooked vegetables, tomato, avocado, cheese and sour cream. Garnish with green onion and cilantro, if desired.
